Remember!  You’re Eggs Benedict must be served within a limited time period. Otherwise the sauce deteriorates. Don’t overcook the sauce. Fresh focaccia bread or fresh English muffins provide a tasty base. Use good quality Canadian bacon, preferably meat that hasn’t been frozen. Garnish with chives.
